Weeknight Quesadillas

Quesadillas are a great afternoon snack and with the addition of some vegetables and chicken, it can be a delicious dinner time treat.


  • Flour tortillas - 8" 
  • 8oz of Mexican blend cheese 
  • Shredded rotisserie chicken (about 2 cups) 
  • Grilled veggies - onions, mushrooms, broccoli, spinach all work well
  • Condiments - salsa, guacamole, or sour cream  

Place the tortilla in a heated and oiled pan.  Use medium heat. Place a handful of cheese and let it melt. Add some chicken to warm it up.  

Add salsa, guacamole, or sour cream.  Remove tortilla from heat.  Add a new tortilla to the greased pan. Add a bit of cheese, which when melted will help stick both sides together. 

Put both tortillas together.  And remove from heat when heated through. 

Heat the oven to 200 degrees F.  Please cooked quesadillas inside until dinner time. 

Add a bowl of salsa and guacamole on the table. Yum!
