Easy Mochi Candy

Mochi candy is super easy to make. In less than 30 minutes you can go from idea to yummy candy.  Traditional Mochi candy for New Year celebrations are pink and green so this New Year, we decided to go with tradition. 

Ingredients: 

  • 1 1/4 cup of glutinous rice flour 
  • 1 cup of water
  • 1/2 cup of sugar (this is modestly sweet, so add more if you like it sweeter) 
  • 1/4 cup of corn starch for dusting
  • A few drops of food coloring 

Mix the ingredients in a bowl until smooth (should look like above). Add a couple drops of food coloring to get the color you want.  Cover with a piece of plastic wrap and microwave for about 2 minutes.  Carefully peel back the plastic and be aware of the steam releasing. 

Then mix it with a hard spatula or paddle until smooth.  It will be really hard to stir, but blend it the best you can.  The smoother the better.  Cover again with the plastic wrap and put it back into microwave for 2 more minutes.

Remove it from the bowl, and place on a well starched cutting board.  Roll it out with a rolling pin. It will become a 1/4" thick flat disc. 

Wrap a knife with plastic wrap and cut the mochi into long strips.  Immediately cover it with corn starch after cutting since it is very sticky.

Line it up and cross cut them into small blocks. Dust them all with corn starch and then use a small strainer to shake off the dust. 

Put the colors together and your treat is complete!
