Simple Rainy Day Lemon Cookies

These are great cookies to make with kids on a  rainy day. It just takes a handful ingredients and about 30 minutes to complete. And there's even easy enough to keep little hands occupied. It's a bit messy but it's a fun and yummy time. 

Ingredients:

• 1 box lemon cake mix 
• 2 eggs
• 1/6 cup of applesauce
• 1/6 cup of oil 
• 1 tablespoon lemon juice and a bit of lemon zest if you are using a real lemon
• 1/2 cup powdered sugar

Mix all of the ingredients together in a bowl, except for the powdered sugar.  

Roll into small 1.5" balls.  Then drop into powdered sugar and coat outside.  

Drop onto parchment lined cookie sheet.  Bake at 375 degrees F for 6 to 8 minutes until set.  

Take out and enjoy!
